Growing up in South Texas, we learned early on that you can’t go wrong with a tortilla and some fajitas! Here, we’ve used just that: fajitas and our new Refried Pinto Beans wrapped up in a warm Chickpea Flour tortilla. A simple meal—especially when you use leftover fajita from your weekend backyard asada—yet tasty and so filling!

Enmoladas are a lot like enchiladas, but instead of red or green sauce, they’re covered in a rich mole sauce! Mole is a unique blend of a variety of chiles and chocolate blends, and—where we're from—every family has their own special recipe! Because mole is known for having many ingredients, we think it's a splendid representation of the many delicious flavors of our culture. And when put on top of enchiladas? Well that's what we call, "The Whole Enchilada!"

And one of our familia's favorite meals is Huevos Rancheros because it reminds us of our hometown, Laredo! So we added our very own Spicy Salsa Roja to give the dish that extra bit of home-cooked, heritage-inspired flavor.

When our familia thinks “backyard asadas,” we think “fajitas.” And because we like to have options for everyone at the table, we make a large variety of fajita-style proteins and veggies—like the chicken fajitas in this recipe—with lots of tortillas on the side to make tacos! We filled our Grain Free Cassava Tortillas with chicken, rolled them up, and soaked them in a flavorful and creamy sauce made with our newest Vegan Refried Black Beans. We know that leaving crust on or off PB&J sandwiches as children was a make-or-break situation. These days, we have a whole new appreciation for crust! We often like to bake our tortillas into some of our favorite recipes as crust for pies, quiches, and tarts. Other nights, we keep things simple (and flat) and use our tortillas as pizza crust!⁠
