Preheat the oven to 350 F.Cook each tortilla over medium-high heat until pliable, about 10-15 seconds.
Cut each tortilla into a rectangular shape. Fill half of the tortillas with about 2 tablespoons of jam in the center.
Place another rectangular tortilla over and press down the edges using a fork. Bake for 15-20 minutes. Make icing by combining coconut cream and confectioners sugar.
Remove from the oven and once at room temperature layer with icing and sprinkles.
To seal pop torts properly, make sure to seal while tortillas are still warm and pliable.
