We grew up enjoying Mexican Street Corn from snack shops, at street fairs, and with friends at birthday parties. Recently, we came up with this dairy free recipe for Queso Papitas Street Corn using our Kettle Cooked Queso Potato Chips and @primalkitchenfoods' Avocado Oil Mayo! It’s so good that it may be eaten up in a flash, but it’s like they say, “Easy come, easy queso.”

Growing up in South Texas, we learned early on that you can’t go wrong with a tortilla and some fajitas! Here, we’ve used just that: fajitas and our new Refried Pinto Beans wrapped up in a warm Chickpea Flour tortilla. A simple meal—especially when you use leftover fajita from your weekend carne asada—yet tasty and so filling!
