Growing up, migas was our mom's go-to recipe because it was simple to make at home, delicious, and full of flavor. We'd top ours with lots of salsa and wrap it all up in a warm tortilla. ¡Buen provecho!

1 pack Siete Almond Flour Tortillas

Heat a large nonstick skillet over medium-high heat. Warm all 8 tortillas and hold in a tortilla warmer or in a clean kitchen towel until ready to build the tacos.
In the same skillet, heat the avocado oil. Add the diced onion, jalapeno, and tomato to the skillet and cook until onions are translucent, about 2-3 minutes.
Add the scrambled eggs and stir with a rubber spatula, seasoning with salt and pepper.. Once the eggs are a little over halfway cooked, firm but still slightly runny, add ½ of the jar of Siete Casera Mild Salsa. Stir in the crushed totopos and remove from the heat.
