Combine beef, taco seasoning, flaxseed meal, and arrowroot starch. Form 12 meatballs.
Heat a medium skillet to medium heat. Add 3 tablespoons of avocado oil and add all meatballs. Sear meatballs on all sides.
Lower heat to medium-low and add enchilada sauce, water or broth, basil, and oregano. Bring to a simmer and cover for 15 mins or until meatballs are fully cooked. (Skim excess oil if needed.)
Garnish with fresh parsley.
Serve with roasted potatoes.
