This Grilled Acorn Squash isn’t like any other grilled acorn squash, it’s a Grilled Acorn Squash preparado. To some, “preparado” might just mean simple toppings, but to us, it means the flavors of lime, chili powder, dairy free yogurt, and homemade vegan cheese! So grab a plate, and enjoy the taste of comida preparada!
1 Acorn Squash, cut into wedges
2 tbsp Olive Oil

¼ cup Vegan Mayo
¼ cup Dairy Free Yogurt
½ Lime, juiced
1 cup Cashews
3 tbsp Nutritional Yeast
½ tsp Garlic Powder
1 tsp Sea Salt
Chilli Powder
1 Acorn Squash, cut into wedges

Preheat the oven to 375 F. Season each wedge with olive oil, salt, and pepper.
Heat a grill over high heat and grill each squash wedge until dark grill marks appear.
Transfer to a baking sheet and bake until tender, about 35 minutes.
Combine mayo, yogurt, lime juice, and season with salt to taste. Pulse vegan cheese ingredients together until fine (like grated cheese).
Drizzle lime crema over acorn squash, top with vegan cheese, and sprinkle with chili powder. Serve with fresh lime.
