Somewhere over the rainbow... is our Vegan Rainbow Wrap! This vegan recipe celebrates all of the vibrant colors of the rainbow by combining sweet potatoes, tomatoes, yellow bell peppers, broccoli, spinach, avocados, and cucumber. These bright colors come together by wrapping all of these veggies and hummus neatly in one of our Grain Free Burrito Size Tortillas. It also uses our Whole30 Approved Taco Seasoning. We’re not sure if there's truly a pot of gold at the end of each rainbow, but we feel like we hit the jackpot with this recipe. Enjoy! ⁠

Directions

Preheat the oven to 350ºF

Mix mild taco seasoning with avocado oil in a large bowl

Add sweet potatoes and coat thoroughly

Bake for 15-20 minutes or until fork tender

Set aside

To assemble: warm burrito tortilla according to package

Add a generous amount of hummus and guacamole in the center of each tortilla

Add spinach, sweet potato, cucumber, tomatoes, bell peppers, and bean sprouts

Fold in both sides of the tortilla and roll the burrito tightly

Cut in half and serve
