2 Tbsp Vegan Butter
2 Tbsp Vegan Mayo
½ tsp Sea Salt
¼ tsp Chili Powder

4 ears of Corn, husks removed
1 cup Siete Kettle Cooked Fuego Potato Chips
2 Tbsp Vegan Butter
2 Tbsp Vegan Mayo
½ tsp Sea Salt
¼ tsp Chili Powder
Vegan Feta Cheese, as needed
Siete Traditional Botana Sauce, as needed
4 ears of Corn, husks removed
1 cup Siete Kettle Cooked Fuego Potato Chips
2 Tbsp Vegan Butter
2 Tbsp Vegan Mayo
½ tsp Sea Salt
¼ tsp Chili Powder
Vegan Feta Cheese, as needed
Siete Traditional Botana Sauce, as needed
Cook corn in boiling salted water for 5 minutes and set aside to cool.
Transfer fuego potato chips to a plastic bag and crush until fine crumbs form.
Cut corn kernels off of the corn cobs and mix with melted butter and vegan mayo. Season with sea salt and chili powder.
In a clear glass cup, layer corn, Traditional Botana sauce, vegan feta, and repeat all once until you have two layers of each.
Finish the esquites with the crushed fuego potato chips. Serve warm or at room temperature.

Sounds good, except I don’t like mayonnaise. Maybe I could substitute plain Greek yogurt.
