Is there ever really such thing as ‘too much cheese’? Our family thinks not! Grab some of our Grain Free Taco Shells and lots of cheese and chicken to make this Cheesy Al Pastor Tacos recipe!
Al Pastor is a traditional Mexican dish typically made with pork that’s been marinated in chiles and pineapple juice, but feel free to use your favorite choice of protein. We want everyone to feel welcome at our table! So whether you’re cooking for one or you’re cooking for many, we’ve got you covered. We adore Al Pastor!
1 package Siete Grain Free Hard Shell Tacos
2 cups Shredded Cheese, Mozzarella & Cheddar Blend
2 Chicken Breasts, cut into small bite-size pieces
4 tbsp Avocado Oil
4 Dried Guajillo Peppers
3 Garlic Cloves, peeled
1 tbsp Marjoram
1 tbsp Dried Oregano
2 Bay Leaves
2 ½ tbsp Apple Cider Vinegar
⅓ cup Water
Salt and Black Pepper to taste
Guacamole
Diced Onion
Cilantro
Fresh Lime
Heat a small pot with water and add guajillo chiles. Bring to a boil and shut off heat. Steep for 10 minutes and then drain.
Bake taco shells in a 350° F oven for 2-3 minutes. Set aside.
In a blender, combine all ingredients for al pastor sauce. Blend until smooth.
Heat a skillet over medium heat. Add oil and diced chicken. As the chicken is cooking, add the al pastor sauce. Cook until all excess liquid has evaporated.
Melt about ⅓ cup of cheese directly on a non-stick skillet over medium heat.
Place taco shell in the center of melted cheese and then lift off crispy cheese to adhere to the shell. Repeat with each shell.
Top tacos with al pastor chicken, guacamole, onions, cilantro, and lime.
