You know what they say, “The best things in life come with cheese!” ... Right? Well, we like to think so! A few of life's best cheesy things: macaroni, cheeseburgers, pizza, grilled cheese sandwiches, and our favorite—quesadillas. Make it a Breakfast Quesadilla with queso, eggs, and your favorite protein, you’ve got yourself a delightfully cheesy dish to kick off your day!
Heat a medium skillet over medium heat. Whisk eggs together, season with salt, and cook with avocado oil. Halfway through, add chopped bacon. Set aside.
Heat a skillet over medium-high heat. Add cassava tortilla, a handful of cheese, and enough scrambled eggs to cover all the cheese. Cover with another tortilla over the top. Cook both sides of quesadilla until crispy.
Cut quesadilla into fourths. Serve with your favorite hot sauce.

Can’t believe how much I loved these! Love your chips and tortillas! I’m used to everything with veggies but did it just like this except used egg whites and sugar free bacon. Only made a single serving. Will try with coconut oil to see how that will be. Wish I had a stake in your company and get free products for life! 😆

I made quesadillas using your cassava tortillas and goat cheese, and they were just delicious! I also made the black beans from the recipe. I am going to make these breakfast quesadillas as well and I’m sure they will be delicious too. I love your salt and vinegar chips and the dip chips. I am allergic to dairy and gluten so your products are perfect . Thank you so much.
