You know what they say, “The best things in life come with cheese!” ... Right? Well, we like to think so! A few of life's best cheesy things: macaroni, cheeseburgers, pizza, grilled cheese sandwiches, and our favorite—quesadillas. Make it a Breakfast Quesadilla with Dairy Free Nacho Cashew Queso, eggs, and your favorite protein, you’ve got yourself a delightfully cheesy dish to kick off your day!
1 package Siete Grain Free Cassava Flour Tortillas
6 Eggs
2 tbsp Avocado Oil
Shredded Cheddar Cheese OR Siete Mild Cashew Queso
4-5 Strips Bacon, cooked and chopped
Heat a medium skillet over medium heat. Whisk eggs together, season with salt, and cook with avocado oil. Halfway through, add chopped bacon. Set aside.
Heat a skillet over medium-high heat. Add cassava tortilla, a handful of cheese, and enough scrambled eggs to cover all the cheese. Cover with another tortilla over the top. Cook both sides of quesadilla until crispy.
Cut quesadilla into fourths. Serve with your favorite hot sauce.
