When it comes to creative and delicious ways to use our Grain Free Burrito Size Tortilla, we say the pie’s the limit. So today, we’re using our tortillas as the crust in one of our favorite comfort foods: Turkey Burrito Pot Pie! This recipe resembles the traditional pot pie with ingredients like peas, sweet potato, shredded turkey, and creamy sauce made from cashews! However you serve it up, your entire family will want a piece of this pie.

350 g Shredded Turkey
1 cup English Peas
1 Celery Stalk, small diced
½ White Onion, small diced
2 Garlic Cloves, minced
½ cup Sweet Potato, small diced

3 tbsp Avocado Oil

Preheat the oven to 375F.
In a large pan, add oil, onions, celery, and carrots. Cook on medium until onions become translucent. Add minced garlic and sweet potato.
Cook for 15- 20 minutes until all vegetables are tender. Add peas and shredded turkey. Season with sea salt, pepper, and dried oregano.
Blend cashews with water and pour into a pan with turkey. Bring to a simmer and cook until the gravy thickens.
Spray a pie pan with avocado spray.
Heat 1 burrito tortilla over medium-high heat until pliable and place in pie pan. Bake for 5 minutes.
Add filling to pie crust and top with another burrito tortilla (make sure to heat up tortilla before to make it pliable). Lightly tuck the tortilla around the edges to close the “pie” and make 3 small cuts in the center to resemble a pie and let out steam.
Bake for 30 minutes or until the edges are golden brown and crisp. Let pot pie cool for 10 mins before slicing.
