Stir in the crushed tortilla chips and remove from the heat.
Heat a large nonstick skillet over medium-high heat. Warm all 8 tortillas and hold in a tortilla warmer or in a clean kitchen towel until ready to build the tacos.
In the same skillet, heat the avocado oil. Add the diced onion, jalapeno, and tomato to the skillet and cook until onions are translucent, about 2-3 minutes.
Add the scrambled eggs and stir with a rubber spatula, seasoning with salt and pepper.. Once the eggs are a little over halfway cooked, firm but still slightly runny, add ½ of the jar of Siete Casera Mild Salsa. Stir in the crushed totopos and remove from the heat.
Add diced avocado and season with additional salt and pepper to taste.
Build migas tacos by spooning the scrambled egg mixture into each warmed tortilla, garnishing with more Mild Salsa to taste.
