Inspired by a Mexican sandwich you'd find on a street cart or at a restaurant along the border, this Grain Free Burrito Ahogado recipe rolls the traditional flavors of a torta (carnitas, refried beans, arbol chiles, tomatoes, garlic, onions, and oregano!) into one of our Grain Free Burrito Size Tortillas! ¡Que rico!

Combine all ingredients for pickled onions and refrigerate until ready to use.
For carnitas, cook pork shoulder in a pressure cooker or stovetop until tender. Pull apart, and season with carnitas seasoning and ½ cup of pork broth. Spread on a sheet tray and broil for 4-6 minutes.
Heat burrito tortilla over medium-high until pliable, about 10-15 seconds on each side. Spread about ¼ cup of refried beans in the center of the tortilla. Add about 6 oz of carnitas over beans. Roll burrito tight according to packaging.
Boil tomatoes in water until they are tender and cooked thoroughly for about 15 minutes.
Blend tomatoes, oregano, salt, pepper, garlic, arbol chile, apple cider vinegar, and 1 cup of water. Return sauce to a pot and heat until it comes to a boil.
Cut burrito in half and pour sauce over. Serve with pickled onions, fresh cilantro & lime.
