Preheat the oven to 375º F. Combine flax meal and water. Let it sit for 10 minutes until it thickens.
Carefully separate each onion ring. Dip into flax meal mixture and then coat with potato chip crumbs.
Place on baking sheet lined with parchment paper. Bake for 15 minutes or until texture is crisp.
Combine all ingredients for smokey ranch and serve with onion rings.
