Heat the oil over medium high and add the rice to the pan, stirring to fully coat in the hot oil. Toast the rice for 3-5 minutes, stirring occasionally, until lightly browned and fragrant.
Add the Chicken Fajita Seasoning, tomato sauce, and broth. Stir to combine and top with the sprigs of cilantro and bay leaf, if you have them on hand.
Cover the pan with a lid and cook on low for 20 minutes or until the rice is soft and has fully absorbed the broth. Remove the sprigs of cilantro and bay leaf.
