50g Avocado Oil plus more as needed
2 packets Siete Lemon Pepper Fajita Seasoning

Wash, trim the ends and slice potatoes into 1” thick circles, add to a big bowl and set aside
Wash, cut ends and remove seeds from jalapenos and slice into thin circles, add to the bowl with your potatoes
Peel a whole yellow onion and cut into strips, add to bowl
Add 50g of avocado oil and 2 packets of lemon pepper seasoning in the bowl and toss until evenly coated
Pre-heat a large pan and add more avocado oil if needed, add contents of the bowl to the pan and cook until fork tender
Transfer to plate and serve with DF crema and scallions if desired
Tips:
If potatoes are too hard, steam with a lid on
