After a backyard asada, our family has leftovers for the whole week! One way we like to use our leftover fajitas (aside from tacos, of course) is Steak Panchos! We pile cheese, fajitas, fajita veggies, Traditional Botana Sauce, and your crema of choice on top of our Sea Salt Maíz Totopos and bake for best results—and by, “best results,” we mean cheese pulls on cheese pulls on cheese pulls!

Preheat your oven to broil on high. Line a baking sheet with aluminum foil and spray lightly with avocado oil.
Place the steak in the center of the pan, lightly spray with avocado oil, and cover the entire piece of steak with the beef fajita seasoning.
Place the assorted sliced peppers and and onions around the rest of the tray, seasoning with more avocado oil and taco seasoning to coat. Toss the veggies to evenly distribute the seasoning and place in the oven.
Broil for 5-6 minutes and then flip the steak to the other side and broil for 4-6 minutes or until it reaches your desired cook temperature. A meat thermometer should read 125-130°F for rare, 135°F for medium rare, and 145°F for medium. The veggies should be slightly charred. Set veggies aside in a large bowl
Rest the steak on a cutting board, tented with a sheet of foil, for 10 minutes. Slice the steak against the grain for the best texture. Transfer the steak to the bowl with the veggies.
On the now empty sheet pan, evenly spread the Siete Maiz Totopos to cover the pan. Top the chips with the cooked steak and veggies, finishing with shredded cheese. Return to the oven for 2-3 minutes, under the broiler, just to melt the cheese.
Serve the nachos with Traditional Botana Sauce, sour cream, shredded lettuce, guacamole, and more!
