This Siete Small Batch Concha Cookie Baking Mix is inspired by memories of trips to our local panadería (Mexican bakery) in our hometown, Laredo, for freshly baked conchas. You may be wondering, "What's a concha?" A concha is actually not a cookie, it's a traditional Mexican sweet bread with the consistency of a bread roll or brioche bread that's got a sweet seashell topping. Fun fact: Concha actually means seashell!
 

So what's a concha got to do with a cookie? When you follow the instructions on our baking mix—adding the sweet pink topping onto the white cookie dough and pressing it with a concha cutter—you've got Concha Cookies!
