With busy schedules and getting back into the swing of things this year, we're looking for ways to prep, make, and enjoy home-cooked meals more easily. Call it a resolution, an intention, a goal, or simply a way to bring joy to our evenings, we're planning ahead so that we can enjoy meals we love (with less hassle!).
These Weeknight Dinner Menus are our way of sharing that joy with you. We hope it takes one step off your plate when it comes to planning ahead, grabbing ingredients, and cooking up delicious meals to enjoy solo or share with loved ones. ¡Buen Provecho!
Monday
This Mexican Chicken Salad is one of our favorites for packing in picnic baskets and bringing to potlucks and gatherings. Place this dish at the center of any table, and the guests will come running.
Tuesday
Some go for gold, but we go for green! (Especially when it comes to this easy after-school meal topped with our Green Enchilada Sauce and Salsa Cremosa.
Wednesday
As the weather gets cooler, we're all in when it comes to warm soups—like this Sopa Azteca! Made with our Vegan Charro Beans and our Red Enchilada Sauce, this sopa packs delicious heritage-inspired flavor into each bite. Top with all of your favorite toppings like crema, avocado, shredded cheese, and more.
Thursday
"Quick and easy!" That's our motto when it comes to weeknight dinners during the school/work week, but then we add in a third descriptor: Delicious! That's what makes us adore these Quesadillas Al Pastor. They're quick, easy, AND delicious.
Friday
With Game Day right around the corner, we're preparing for allllll of the gatherings!Whether hosting a get-together with friends and familia or looking for a recipe to bring to your Game Day potluck, this recipe is calling your name. Topped with carnitas, cheese, mustard crema, and pickles, it's a dish that everyone can huddle around!
