3 lbs Chicken Wings, pat dry
1 package Siete Spicy Taco Seasoning
4 Dried Guajillo Peppers, seeded and stemmed
½ cup Water
1 tbsp, Apple Cider Vinegar
2 Garlic Cloves
2 Bay Leaves
1 tbsp Dried Oregano
3 Limes, juiced
2 tsp, Sea Salt
½ tsp Clove
¼ cup Avocado Oil or Neutral Oil
⅔ cups Dairy Free Yogurt
⅓ cup Mayonnaise
2 Limes, juiced
1 Garlic Clove, grated
1 tsp Onion Powder
1 bunch Cilantro, chopped
1 pinch, Sea Salt
Preheat the oven to 375°F.
Bring a small pot of water to a boil and add guajillo chiles. Turn off heat and let chiles steep until softened (about 10 minutes, drain).
In a blender, combine 1 package of Siete Spicy Taco Seasoning, guajillo peppers, water, apple cider vinegar, bay leaves, clove, sea salt, lime juice, oregano and garlic. Blend until smooth.
In a large bowl, combine chicken wings with ¼ cup of oil. Pour blended al pastor sauce and toss wings thoroughly.
Place wings in a baking sheet lined with parchment paper. Make sure to transfer with all sauce left in the bowl.
Bake wings for 30 minutes at 375°F.
After 30 minutes, turn the temperature up to 425°F and cook wings for 30 more minutes.
Combine all ingredients for cilantro ranch in a large bowl and combine thoroughly.
Serve wings with extra limes and cilantro ranch.
