Step 1
Drain the tofu and crumble it with your hands or fork until it resembles ground meat. -
Step 2
Heat avocado oil in a skillet over medium heat. Add the crumbled tofu and cook for 4-5 minutes, until lightly browned. -
Step 3
Stir in the fajita seasoning, tomato paste, and water. Mix well to coat the tofu and cook until warmed through. -
Step 4
Stir in the diced tomato and squeeze in the lime juice. Taste and adjust if needed. -
Step 5
Lightly pan-fry tortillas in a skillet with a drizzle of avocado oil until slightly crisp. -
Step 6
Assemble the tacos by filling tortillas with the tofu mixture and topping with cilantro and fresh lime.
