As the age-old adage goes, “the best things in life are green.” Or—even if that’s not how it goes—this bright and tangy Green Enchilada Sauce makes a strong case for our alternative interpretation. It’s made from whole vegetables like roasted tomatillos, onions, and jalapeños. Use this sauce to: give your enchiladas a zesty-bite; bring some delight to your next crockpot potluck; or bake some green goodness into breakfast chilaquiles.

I grabbed this on a whim at Whole Foods along with the taco seasoning, hot sauces and the almond flour tortillas, oh, and the lime tortilla chips! I made chicken enchiladas and it was a pure dream. The enchilada sauce is light and super flavorful! Will become a staple in my house!
