One of our Siete team members, Lup, gathered in our Siete kitchen with Chef Mel to make a beloved dish, Mofongo. This recipe was passed down from Lup's dad and grandma, and today—in celebration of heritage, culture, and togetherness—we made it our own using our Grain Free Queso Puff Snacks!   1. Step 1

    Pour about 1 cup of oil into a small to medium sized cast iron skillet. Heat over medium low
  2. Step 2

    Peel and slice plantains into 1” pieces. Fry plantains for 3-5 per side until lightly golden brown..
  3. Step 3

    Place 1-2 minced garlic cloves in a small metal bowl. Spoon about 2 tablespoons of hot oil over the garlic to remove the raw bite.
  4. Step 4

    Working in batches, mash the plantains in a molcajeta, mortar & pestle, or food processor. Add Queso Puffs, cooked garlic, and enough broth and salt to reach the desired consistency and flavor. Mash until the mofongo holds together and has some chunks still remaining in the mixture. 
  5. Step 5

    To make the cilantro sauce, mash the garlic, cilantro, lime, and salt together until smooth and the herbs have broken down. 
  6. Step 6

    Press the mofongo in a bowl or various small bowls. Turn the bowls out upside down on your serving plates and top each one with the cilantro sauce. 
  7. Step 7

    Mofongo can be enjoyed on its own or as a side dish accompanying guisados or caldos.
