This hearty and savory sauce reminds us of enchilada dinners in Laredo, Texas. Imagine a plate of three ground beef-stuffed enchiladas, covered in red enchilada sauce and melted cheese, fresh out of the oven. Steam escapes from every cheesy forkful, and “mmmm”s can be heard from all around the table—especially when each bite is mixed with a side of refried beans and Mexican rice. Inspired by one of our favorite meals, we made this beloved sauce. ¡Buen Provecho!
