If you like piña coladas and getting caught in the rain—well, actually, these Pineapple Coconut Paletas don't have much to do with getting caught in the rain especially since there's been very little rain in this hot Texas summer—but if you like pineapple, coconut, and icy cold treats, then we're thinking you'll love this paleta recipe.


  • 1 Pineapple, cut into chunks 
  • 1 can unsweetened Coconut Milk ( Full Fat) 
  • 4 tsp Coconut Sugar 
  • ½ cup Toasted Coconut Flakes 


  1. Place all ingredients (except toasted coconut flakes) in a blender and blend until smooth. 
  2. Place in paleta molds and top each paleta with toasted coconut flakes.
  3. Freeze overnight.
