Heat oil in a large cast iron skillet over medium-high heat. Add all sliced vegetables and cook until slightly charred. Finish with the packet of seasoning and stir to combine
Serve the fajitas with warmed tortillas, salsa, sour cream, cheese, guacamole, lettuce, and lime wedges.
