It’s easy to daydream about new recipe pastabilities when it comes to our Grain Free Burrito Size Tortilla. We dozed off and found ourselves under the warm Tuscan sun, surrounded by a light breeze, sipping on a glass of vino tinto, and digging into a piece of Grain Free Lasagna. That’s pretty much where our daydream ends but exactly where this very real recipe begins! By layering our Grain Free Burrito Size Tortillas, turkey tomato sauce, and vegan parmesan sauce, this recipe takes you on a trip around the world and on a new Grain Free Tortilla adventure. Ciao!


  • 3 Siete Burrito Size Tortillas
  • 1 lb Ground Turkey 
  • 1 Can Tomato Sauce 
  • 2 tsp Garlic Powder 
  • 1 tsp Onion Powder 
  • 1 tsp Dry Basil 
  • 1 tsp Dry Oregano 
  • ½ tsp Red Pepper Flakes 
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and Pepper to taste 
  • White sauce:
    • 2 cups water 
    • 1 cup Cashews 
    • 1 tsp Nutmeg 
    • ½ tsp Sea Salt 
  • Vegan Parmesan:
    • 1 cups Cashews
    • 3 tbsp Nutritional Yeast
    • ½ tsp Garlic Powder 
    • 1 tsp Sea Salt 
  • Olive Oil Spray, fresh basil for garnish


  1. Pulse all of the ingredients of vegan parm in a food processor and set aside. Preheat the oven to 375F. In a skillet over medium, add 2 tbsp of extra virgin olive oil and cook turkey, breaking up ground turkey as best as possible. Add seasonings, oregano, basil, red flakes, salt, pepper, and cook together for 3-5 minutes. Pour in tomato sauce and ½ cup of water and bring to a slow simmer for 15-20 minutes. 
  2. While that is cooking, blend 2 cups of water, 1 cup of cashews, nutmeg, and salt in a blender until smooth. Pour mixture into a small saucepan and bring to a simmer. Stir constantly to avoid scorching. Cook until sauce thickens to a gravy consistency. 
  3. To assemble: Spray a 8x10 inch baking dish and pour 3-4 tablespoons of white gravy to lightly coat the bottom of the dish. Cut about 1” off of each side of the burrito to have it fit the dish. Divide white sauce and meat sauce into 3 parts. Layer tortilla with one part gravy, one part meat sauce, and 1-2 tbsp of vegan parmesan. Use 3 tortillas in total. Before baking spray the top of the lasagna with cooking spray. Bake for 40 mins. Let cool for 30 before cutting. Serve with chiffonade basil.
