Word on the street is that sweet potatoes and zucchinis are in a friendly competition to find out which is the most versatile vegetable.
Turns out—after hashing it out in this recipe—both are perfect for an array of quick and healthy dishes like this Sweet Potato & Zucchini Breakfast Hash! They paired up in a cast-iron skillet with sautéed onions, spinach, and our Whole30 Approved Traditional Hot Sauce. And what tops off an eggceptional breakfast hash? (We take it that you know where we’re going with this...) Eggs, of course! Serve it up in the morning, or enjoy as breakfast for dinner (or lunch, if you'd like!) with the family

1 large Sweet Potato, peeled; small diced
Siete Whole30 Approved Traditional Hot Sauce
½ White Onion, thinly sliced
1 Zucchini, small diced
1 cup Fresh Spinach
3 Eggs
3 Tbsp Avocado Oil
Salt and Pepper to taste
Garnish - Chives, minced
In a large skillet, add avocado oil and heat to medium-heat.
Sauté white onions until translucent and add sweet potatoes and zucchini.
Sauté until sweet potatoes are tender and start to brown. Add spinach and cook until wilted.
Season with salt and pepper.
Add 3 tablespoons of Siete Traditional Hot Sauce and mix in.
Make 3 small nooks in the pan and crack one egg in each. Season each with salt and pepper. Cover for 2-3 minutes or until egg whites are cooked.
Garnish with minced chives and serve.
