Made with a homemade dairy free cajeta caramel sauce and almond butter, this filling brings two of our Grain Free Mexican Cookies together to make the sweetest (and cutest!) alfajores cookie sandwiches topped with frozen dried fruit, chopped nuts, and cacao nibs!
To make cajeta, combine all cajeta ingredients in a saucepan and simmer on medium-low heat until mixture has reduced to 1 cup and is a deep golden brown (or for about 40 minutes). Refrigerate until cool.
Mix almond butter and cajeta.
Make sandwiches using two cookies and cajeta butter.
Repeat with all cookies.
Roll each cookie sandwich in toppings of choice.
