Growing up, we ate a lot of cheeseâquesadillas, enchiladas, cheeseburgers, grilled cheese sandwiches, pizza, and of course, one of our childhood favorites, mac and cheese! Here, weâve shared a slightly âdressed-upâ version of this nostalgic recipe that adults and youngsters alike can enjoy: Dairy Free Mac and Cheese with Grain Free Nacho Tortilla Chips as a crunchy âbreadingâ on top. With deliciously cheesy flavor and zest packed in every bite, this recipe is sure to mac you and your entire family smile!
1 lb Gluten Free or Grain Free Pasta â
2 jars Siete Mild Cashew Queso â
Âź cup Coconut Aminos â
1 tbsp Nutritional Yeastâ
½ cup Dairy Free Milk â
½ tsp Sea Salt â
3 tbsp cup Vegan Butter or Ghee, melted â
Avocado Spray â
1 bag Siete Nacho Grain Free Tortilla Chips, crushedâ
½ tbsp Dried Parsleyâ
Preheat the oven to 375° F. â
Cook pasta according to directions. Drain and gently spray with avocado oil to avoid sticking.â
In a blender combine queso, coconut aminos, nutritional yeast, dairy free milk, sea salt, and melted butter or ghee. Blend for 1-2 minutes on high until smooth.â
In a medium bowl, combine cheese sauce with pasta. Transfer to an 8x8 baking pan sprayed with cooking spray. â
Crush chips and mix with dried parsley. â
Spread over the top of the pasta and spray with avocado spray and bake for 15 minutes. Let mac and cheese sit for 2-3 minutes before serving. â
