Growing up in South Texas, we picked lemons from the trees in our backyard, found the sweetest Ruby Red grapefruits at the pulga (fleamarket), and bagged oranges in the bed of vendor pickup trucks on the side of the road. Inspired by the tastes of home, we made these Citrus Marinated Chicken Nachos with our Grain Free Dip Chips and dairy free Mild Nacho Cashew Queso!
½ cup Fresh Orange Juice
½ cup Grapefruit Juice
1 Lemon, juiced
3 tbsp Extra Virgin Olive Oil
1 tbsp Dijon Mustard
¼ cup Cilantro, roughly chopped
Salt & Pepper to taste
4 Chicken Thighs, boneless & skinless
1 Bag Siete Grain Free Dip Chip
1 Jar Siete Mild Nacho Cashew Queso
1 Siete Chipotle Hot Sauce
Blend all ingredients for marinade until smooth. Combine with chicken thighs in a bag or container and marinate for 4 hours or overnight.
Heat a cast iron grill or skillet over medium-high heat. Remove chicken from marinade and discard excess marinade.
Cook chicken on a grill or skillet. Sear both sides until grill marks appear and chicken is cooked through (about 8-10 minutes per side). Let chicken rest for 5-10 minutes and then slice thinly.
Spread Siete Grain Free Dip Chip over a sheet tray. Top with citrus chicken warmed Siete Mild Nacho Cashew Queso, and Siete Chipotle Hot Sauce.
Garnish with fresh avocado, cilantro, diced tomato, & lime wedges.
