Our family believes in the power of food, and its ability to gather loved ones around the table; but this recipe reminds us that food is also a way to remember and honor loved ones who came before us.
We share this Taco Salad in memory of Carol, Kristen’s mom, who taught her “that love has no limitations, family is who you love, the earth is for us to respect and nurture so that it can give back to us, a smile can mean the world to someone so always look people in the eye and smile, wave to people you do not know, and never ever take anything for granted.”

- 1 Head Romaine Lettuce, chopped
- ¼ Red Small Onion, thinly sliced
- 1 Small Tomato, small diced
- 1 can of chili beans, not rinsed
- ½ c Shredded Cheese (cheddar, cheddar jack blend, or Mexican blend)
- Catalina dressing
- 4 tbsp Red Wine Vinegar
- 2 tbsp Ketchup
- 1 tsp Honey
- 1 tsp Paprika
- 1 tsp Garlic powder
- 2 tbsp Avocado Oil
- Salt/ Pepper
- 1 c Siete Grain Free Nacho Tortilla Chips, crunched
Directions
- Gently mix all ingredients, except the ingredients for the dressing, together
- Whisk all ingredients for dressing together and set aside
- Serve nacho salad in a bowl and drizzle with Catalina dressing
