A list of things that bacon is good for: enjoying in breakfast tacos, using to form smiles on pancakes, and strategically cooking at the precise time you want to wake your family to start the weekend chores (you can thank us later). Most recently, however, we’ve enjoyed it in this dairy free Bacon Queso dip for it’s undeniable ability to bring us to potato-chip bliss.
Heat a large skillet over medium heat, add oil and onions. Caramelize onions slowly over medium-low heat for 35 minutes. Add splashes of water to the pan to avoid onions from searing.
Remove onions from the pan and add bacon. Cook until crispy and remove from the pan.
Heat cashew queso in a small pan over medium heat. Add onions and bacon (reserve some for garnish).
Garnish with crispy bacon, spring onions, and cilantro. Serve with Siete Sea Salt Potato Chips.
